Before heading back to California, I swung by Princeton to visit my dear friends Matt and Sarah. It was a seriously fun and relaxing time filled with delicious food and amazing conversation. Sarah whipped up a batch of her fruit/veggie smoothie and I have to admit that I loved it a lot more than I thought I would. We also made vegetable lasagna that tasted so good I couldn't believe that it was healthy too. We substituted noodles with sliced zucchini and yellow squash, and used non-fat greek yogurt mixed with diced broccoli in the place of ricotta cheese. I also had fun making some strawberry and cream scones but...let's just say that I learned the hard way that baking soda and baking powder are not interchangeable. Seriously.
That trip was so rejuvenating, and it's beyond heartwarming to see Matt and Sarah's unconditional and selfless love towards each other, and others as well. And you know it's love when they let you barrel down the streets of New Jersey in their only car without a license...if you're a cop reading this I'm just kidding.
